Brussels Sprouts are a staple of any holiday menu. They are such a fantastic vegetable to mix with other ingredients and transform them into an exquisite dish. We mixed them this time with chorizo and red onions which on their own bring amazing flavours to the dish, plus we added Guajillo Chilli Flakes for even more flavour and a delicate kick. There are such strong flavours already on this dish that we chose Guajillo Chilli Flakes because is not a strong chilli, on the contrary, Guajillo is delicate and tasty instead of hot. The dish is very easy to make and the result is unique and extremely rich.
Brussels Sprouts with Chorizo & Red Onion
- ½ cup sliced hard chorizo.
- 1 pound Brussels sprouts, trimmed, halved
- ½ red onion, thinly sliced
- 1 tsp Guajillo Chilli Flakes
- Salt & Pepper
In a medium high heat pan add chorizo slices until they are crispy on both sides. Add Brussel sprouts, onions, chilli flakes and pepper. Mix well and cover the pan for about 15 minutes stirring occasionally. Continue to cook uncovered for about 5 minutes until some of the Brussel sprouts are nice and golden. Garnish with some more Guajillo Chilli Flakes.
