Cactus Salad is one of the classic ways to enjoy cactus. A very simple but full of flavour mix of fresh ingredients that makes a perfect light lunch, dinner or like in our case, a perfect addition to our black beans tacos!
Nopal or cactus are the flat paddles of the prickly pear fruit cactus. This cactus paddles are a very important part of Mexican cuisine. They can be eaten raw, cooked and grilled. Cactus are full of nutrients! Their texture is similar to that of green beans and the flavour is fresh and a bit tart. The best way to enjoy cactus is fresh, however, when fresh produce is not easily available, the best option is to use them from a jar. They are usually cooked and seasoned which takes away the cleaning process that can be daunting and spiky. Here’s what you need to make a delicious Cactus Salad:
- 1 Cup Tender Cactus La Costeña
- 4 Tomatoes
- 5 Radishes
- 4 Spring Onions
- Extra Virgin Olive Oil
- 1 Crushed Garlic
- Salt & Pepper
- Feta Cheese
Drain the tender cactus and rinse them for a while. Cactus naturally have a gooey liquid that is perfectly safe to eat, however, it can be removed by rinsing it and letting it drain for a while. Once they have drained, cut them in cubes or small strips and add to a bowl. Chop the tomatoes, radishes and onions and add to the mixing bowl. Roughly chop the coriander and set aside. To make the dressing just whisk the olive oil with the crushed garlic, lime juice, salt and pepper to taste. Add the dressing to the vegetables and sprinkle the coriander at the end to keep it fresh. Add crumbled feta on top.
