Honey & Chipotle Almonds

These almonds are the perfect snack or as in this case, the perfect addition to an already delicious salad. This is one of those dishes that looks overly complicated but it really isn’t. The flavour, however, is exquisite! There are many things that make this salad a winning combination: The textures, the flavours and the colours!

For the almonds:

-50g Plain Almonds

-1tsp Honey

-1tsp Chipotle in Adobo

-Pinch of Salt

Preheat oven to 175C. Mix honey, chipotle and salt. Cover the almonds. Place coated almonds into the oven for 10-15 min. The time will depend on how hot your oven is. Check them after 10 minutes to avoid burning them. Once ready, let them cool and set aside.



For the salad:

-1 Cauliflower

-1/2 Red Onion Sliced

-Olive Oil

-1 Garlic Clove Crushed

-1/2 tsp. Ground Cumin

-1/2 tsp. Celery Salt

-120g Red Rice

Preheat oven to 185C

In a small pot, cover the rice with plenty of water. Cook in high heat. When the water starts to boil, lower the heat to a medium low level and let the rice cook in a gently simmer. The rice will usually be cooked in 15-20 min. If there’s some water left, drain it and let the rice cool down. Set aside.

Cut cauliflower and onion. Place them in a baking tray. Drizzle with a little bit of olive oil and sprinkle the ground cumin, celery salt and the garlic. Mix until everything is covered with the oil and spices. Roast in the oven for 15-20 minutes or until the vegetables are starting to char a little bit. The cauliflower should be still crunchy but thoroughly cooked. Take out from the oven and let it cool.



For the dressing:

-5 Tbsp. Extra Virgin Olive Oil

-Juice of a Lemon

-1 Large Garlic Clove

-1/2 tsp. Dijon Mustard

-1/2 tsp. Chipotle in Adobo

-Salt & Pepper

Whisk all ingredients together. We suggest to start with the juice of half lemon and a pinch of salt and go from there.

In a big bowl mix the rice, cauliflower and dressing until evenly coated. Add the almonds and add fresh coriander or pomegranate seeds on top. This salad is delicious on its own for a fantastic rounded lunch, light dinner. Heavenly textures and flavours that will last until the last bite.
