Lentil & Spinach Soup

Lentils are an amazing source of proteins, carbohydrates and most of all, they are the perfect way to warm up during a cold day. There are many ways to make a lentil soup, some would add beef, bacon or even chicken. Our Lentil & Spinach Soup is meatless and full of flavour.
4 Portions

-2 Cups Dried Lentils
-2 Celery Sticks Chopped
-2 Medium Carrots Chopped
-2 Tomatoes Chopped
-1 Small Onion Chopped
-2 Big Handfuls of Spinach
-1 Small Handful of Coriander
-1 Garlic Clove
-5 Cups of Water
-1 tsp Ground Cumin
-1 tsp Ancho Powder
-1 Tbsp Powder Vegetable Stock
-Salt and Pepper to taste
-Olive Oil

In a large pot, heat a little bit of olive oil and saute the onions for a couple of minutes. Add the garlic, celery, tomatoes and carrots for 3 more minutes. Add the water, lentils, vegetable stock, cumin, ancho powder, salt and pepper. Cover the pot, lower the heat and let the lentil soup cook gently for about 20 minutes. Add the coriander and spinach and mix. If the lentils are still a bit hard, let them cook for a further 5-10 minutes. Take this opportunity to check if your soup needs any salt or more vegetable stock.
