We at Mextrade love cooking days. We get to play chef and the best of all, we get to eat what we make. As much as we love Mexican food the truth is that we love all kinds of food. We believe that food not only is delicious but also a cultural evidence of how we live in a precious rich world full of flavours and possibilities. This Pinto Beans Chipotle Hummus is a testament to that principle. Inspired in a classic loved by all dip, we added a Mexican Twist to it by using Pinto Beans instead of chickpeas and Chipotle in Adobo. The result is a delicious, velvety smooth dip with all the flavour and a lot of smoky heat from the chipotle.
To make this Pinto Beans and Chipotle in Adobo Hummus, just blend all the ingredients. The Pinto Beans are already seasoned so be careful when adding salt. We recommend to taste it as you go to get it just right. As you can see, we are not giving you an exact amount of Chipotles in Adobo to use because these are hot. We used a couple of them plus some of the sauce they come with to get a mild heat. We recommend to start with one chipotle and go from there. If you want more flavour and less heat you can remove the seeds inside the chipotles. You don’t need to add olive oil because the beans are so creamy on their own. It doesn’t need the extra oil.
We can think more than one ways to enjoy this beautiful dip. We used Italian bread sticks but you can also go for pita bread, corn tortilla chips or anything that takes your fancy. The only problem you’ll face is how to stop eating it. It is that good. We hope you like it as much as we did.
