Puff Pastry Sausage Cups – The Mexican Way

We believe in mixing good things to make something delicious. We love classic British food but we love more to be able to mix it with some Mexican ingredients. Here’s our take on a British classic, the Mexican way. Easy and delicious for all of us needing a little spice in our lives.

Preheat the oven to 180ºC/350ºF/gas 4. Heat the olive oil in a saucepan and add the sausages. Cook gently for about 10 minutes.

Meanwhile, on a floured work surface, roll the pastry out into a big rectangle as thick as a pound coin and cut it lengthways into two long strips. Keep cutting until you have 6 small rectangles. Spread a little  olive oil on a 6-cup large muffin tin and place the puff pastry. Add the cooked sausages (3 halves inside each muffin cup), also add one La Costeña Green Pickled Sliced Jalapeño in between the sausages. Roast for 15–20 minutes, until the sausages are browned.

Remove from the oven, smash some La Costeña Green Pickled Sliced Jalapeño and mix it with mayo making a creamy sauce.
