Roasted vegetables are so delicious! They don’t need a lot to make them brighter, tastier and prettier. This recipe for Roasted Vegetables & Chilli Mix is as easy as it gets to have a healthy side dish that also looks amazing.
Roasted Vegetables With Chilli Mix
- Sweet Potatoes
- Extra Virgin Olive Oil
- Guajillo Chilli Flakes
- Ancho Chilli Powder
- Chipotle Chilli Powder
- Fresh Thyme
- Salt & Pepper
Preheat oven to 160C
Cut all vegetables into similar sizes and arrange them in a baking tray. Drizzle with olive oil and sprinkle with a mix of chilli flakes, salt & pepper. Make sure all the vegetables are nicely covered. Arrange a few springs of thyme. Bake for 20 minutes or until the vegetables are cooked through.
There are no specific measurements because it depends on the quantity you want to make. For a small portion as the one we made we only used a handful of baby carrots, one parsnip, one sweet potato and a large amount of the chilli mix.
