Chicken Tinga is a classic dish from Mexico. There are two main types of Tinga:  made with beef or chicken. The secret lays in the sauce. The whole dish is made out of very few ingredients but packs amazing flavour! This dish is extremely versatile too, you can have it as Tinga Tostadas (a corn tortilla that has been fried or baked and used as a crunchy base), Tinga Tacos, Tinga Quesadillas or on its own. Tinga is an all time crowd pleaser, it would be very hard to find someone who doesn’t like it. The sauce is made using tomatoes, onions and most importantly, chipotles in adobo. These three ingredients are enough to make the most flavourful chicken dish. Here’s how you can make yours at home.

Note: Chipotles in Adobo are a beautiful and powerful ingredient to add to your food. They add a very intense, rich and smoky flavour. We advice to add 100g for this recipe and see how it works for you. You can easily add more if needed.


  • 2-3 Chicken Breast Cooked and Shredded
  • 2 Large White Onions. One halved and one cut in slices
  • 5 Tomatoes Halved  (mixing different types works great)
  • 100g Chipotles in Adobo La Costeña
  • 1 Garlic Cloves
  • Salt & Pepper
  • Mexican Oregano
  • Olive Oil

To make the sauce:

Roast the tomatoes and one onion in a non stick pan until blackened. Once they have softened and charred a little transfer them to a blender. Add the chipotles, a pinch of salt and pepper. Blend to obtain a smooth sauce. Taste and add more salt if needed. You could also add chicken bouillon.

To make the Tinga:

Add the sliced onion to a pan on medium high heat. Sauté in a little bit of olive oil and add a pinch of Mexican oregano. Add the garlic clove minced and stir until the onions are soft and golden. Pour the tomato sauce and simmer with the onions for 15-20 minutes. Add the shredded chicken and let it cook for another 15 minutes. Taste and correct seasoning.


To serve:

Tinga is traditionally served with soured cream and shredded lettuce, however, we decided to add avocado, sliced radishes, coriander and a sprinkle of feta cheese.
