It is not a secret that we love tacos and we are so happy that you love them too! That’s why we are sharing our Tacollection, a taco directory that we’ll keep updating so you can have quick access to any of the taco recipes we’ve made. We hope they bring inspiration in times where you don’t know what kind of taco you’re in the mood for. 


Veggie Tacos 

Adding more vegetables to our recipes as a healthy and sustainable alternative to animal protein is not only intentional and responsible but also really fun! There are so many easy and delicious ways to introduce vegetables in our daily diets and Mexican food is not the exception! Much of the flavours present in our food come from sauces and salsas made with precious ingredients such as tomatillos, chillies and spices to name some of them. The base of any fantastic adobo is most of the time vegetarian. It only makes sense to play with this and transform our recipes into vegetarian dishes. Al Pastor Veggie Tacos - These tacos are fantastic! The adobo is the key to make the mushrooms transform into a fantastic veggie option to tacos al pastor. 
Roasted Veggie Tacos with Chipotle-Tahini Sauce - The Chipotle-Tahini Sauce in this recipe is amazing. We use it often beyond tacos. We used cauliflower and butter beans for these tacos but you can use whatever veggies you want. The key is the sauce!
Baja Veggie Tacos - This is the ultimate Baja style veggie tacos. The capeado or batter used to coat the cauliflower is exactly the same used for the authentic Ensenada Fish Tacos. Add the toppings and you won’t even miss the fish. We often have them just because they are so light and delicious! 
Chipotle Plantain with Sweet Pasilla Sauce - These tacos are for those of us who like to experiment with new flavours. Everything here plays so well together. There are beautiful black beans, sweet-savoury-spicy plantains and an insanely lovely pasilla sauce made with cinnamon and piloncillo syrup. An experience.

Fish Tacos

Fish tacos are light, fresh and easy to make. There are many different ways to make them but if you had to master the classic ways, these are your recipes to go. They have been tested over and over again and they always produce real, authentic and delicious Baja style fish tacos. 

Baja Fish Tacos A classic with first-hand information on how to properly make these classic tacos. They come with a beautiful chipotle salsa. A must try!
Easy Fish Tacos - This recipe keeps the spirit of the original Baja fish tacos but is lighter since the fish is grilled instead of fried. You won’t even know how many you ate. They are so light, fresh and go down really easy. You’ve been warned!

Beef, Pork & Chicken Tacos

These are just some of the many ways you can add flavour to your tacos with different and amazing adobos and salsas. You can find from more traditional recipes to unusual ones. Always delicious!

Pulled Pork Tacos - These tacos are so good! Slow-cooked pork until tender and with a salsa that you’ll keep making over and over.
Pork Belly Tacos - The pork belly is tender, the salsa tangy and spicy and the slaw is fresh and crunchy. Perfection in every bite. 
Easy Steak Tacos - There are many reasons why these tacos are amazing. They can be put together in no time, every topping is fresh and the beef just needs to be lightly seasoned. A classic and delicious one!
Tacos de Birria - It is very hard to say which one can be Mexicans favourite taco but we’re pretty sure that birria tacos come very high up on the list. These tacos are everything: tender and perfectly seasoned meat, crunchy corn tortillas, fresh toppings and a few drops of lime juice. Absolutely worth the effort. 
Ancho Adobo Tacos - There are highlights on every meal we make and in this recipe, the adobo is the star. You can use chicken as we did but pork or a veggie option would be absolutely amazing too and it’s all because of this adobo. If you like cochinita pibil, you’ll like these ones. There’s beautiful spices, ancho chilli, orange and lemon juice. It is awesome.

Enchiladas

Enchiladas are such a comforting meal. They bring memories of having homecooked food. The beauty of enchiladas relies on simplicity. Even when they can look complicated, they tend to be easy to make and can be made with very simple ingredients. Here are just some examples. There's so much more than red sauce and covered-in-cheese enchiladas we see often.

Vegetarian Enchiladas with Creamy Chipotle Sauce - Delicious veggies wrapped in corn tortillas and covered with a creamy chipotle sauce. You need this one!
Pastel Azteca - Our beautiful Mexican lasagna! Layers of corn tortillas with chicken and delicious cheese and sauces We have two recipes and they are both so good. Pastel Azteca and Poblano and Green Salsa Pastel Azteca.
Chipotle-Beans Tacos - Don’t let the name confuse you, these are beautiful enchiladas covered in the most delicious and creamy chipotle beans sauce. You’ll make them over and over. 
Poblano Enchiladas with Kale and Potatoes - These are fabulous. Creamy kale and potato filling inside lightly fried corn tortillas and lots of smooth poblano sauce make these ones one of our favourites!
Creamy Enchiladas - The key here is the sauce. You can change the fillings, the toppings but keep the sauce. Absolutely beautiful!
