There are some combinations that are a match made in heaven and chorizo and potatoes is one of those. Even when it can be quite difficult to find chorizo similar to the one we have in Mexico, only a few tweaks can make regular chorizo to become extra tasty and then all you need is good, authentic beans, corn tortillas or tostadas and simple toppings.

Chorizo and Potatoes

-350g good quality chorizo (it can be a veggie version)

-200g potatoes, finely diced

-Adobo Seasoning

-smoked paprika

-Chipotles en Adobo (optional)

-salt and pepper

1 Remove the casing from the chorizo and add it to a large pan set to medium heat. Cook the chorizo until softens and then press it down with a potato masher to break the chorizo down to small pieces. 

2 Add the potatoes, cut into small cubes and continue cooking for 15 minutes on low heat, covered with a lid. If the chorizo renders a lot of fat, remove with a spoon leaving just enough to cook the potatoes. 

3 Once the potatoes are cooked, taste and check for seasoning. Sometimes chorizo is not as tasty as we want it to be or it loses some of its strength when mixed with the potatoes. If that is the case, add Adobo Seasoning which has ancho pepper, garlic and onion which makes it an excellent ingredient to use. You can also add smoked paprika and chipotles en adobo, just keep in mind that adding chipotles will bring the spice level up. Season with salt and pepper to taste. Once you are happy, keep the dish warm until serving. 

 

Black Beans and Chorizo Tostadas

-corn tortillas or tostadas

-chorizo and potatoes

-black beans

-feta mix (feta cheese, finely diced white onions and dried oregano to taste)

-green salsa

-avocado slices

1 To make tostadas, set your oven to 200C and while it preheats, lightly brush corn tortillas on both sides with vegetable oil and lay them flat on a baking sheet. Bake for 5 to 10 minutes on each side. They are ready when they are crispy like tortilla chips. Remove from the oven and sprinkle with sea salt, reserve.

2 To make the feta mix, crumble feta cheese and mix it with finely diced white onions. Add dried oregano to taste and mix well. 

3 Warm the black beans, you can use refried beans or whole. Keep them warm until serving.

4 Add a layer of black beans to the tostadas, followed by chorizo and potatoes. Sprinkle with feta mix and green salsa. Garnish with avocado slices and enjoy!

 

Notes

  • This combination is perfect for tacos or burritos too! 
  • Eggs and chorizo is a classic Mexican breakfast and you can make yours just by adding eggs to the chorizo or even to the potatoes and chorizo mixture too. 
  • Salsa Verde goes deliciously well with chorizo but feel free to use your favourite salsa with this!
