Chicken Meatballs with Cilantro-Jalapeño Sauce

There are so many flavourful ingredients at play here and all of them get along beautifully. You can taste the garlic and the ginger in the chicken meatballs. The cilantro-jalapeño sauce is a dream! The use of pickled jalapeños adds a delicious tangy twist to it that is worth trying. The sauce has just a hint of spiciness, it's all about the flavour. Serve with plain white rice and a simple salad which will add freshness and textures to an already perfect dish.


Chicken Meatballs

-500g ground chicken

-1 ¼  cup breadcrumbs

-1 egg

-2cm grated ginger

-2 garlic cloves, crushed

-2 tbsp olive oil

-1 tsp  ground coriander

-1 tsp  ground cumin

-1 tsp Lemon Pepper Seasoning

-1 tsp salt 

-1 tsp pepper

-Olive oil for brushing

1 In a small bowl, mix ¼ cup of breadcrumbs and all the spices.

2 In a large bowl, mix the ground chicken with one cup of breadcrumbs with a fork. 

3 Add the breadcrumbs and spice mix to the chicken and evenly distribute.

4 Add the egg, olive oil, crushed garlic and grated ginger and mix well with your hands until everything comes together. 

5 Take about two tablespoons worth of the mixture and make the meatballs.

6 Preheat the oven to 200°C

7 Place the chicken meatballs on a baking tray lined with baking paper. We recommend lightly brushing the meatballs with olive oil. This makes them golden and crispy on the outside while nice and soft inside. 

8 Bake in the oven for 30 minutes or until they are nicely golden brown. Let them rest for a few minutes once out from the oven. 


Cilantro-Jalapeño Sauce

-2 Tomatillos La Costeña

-1 Whole Pickled Jalapeño La Costeña, stem removed

-1 bunch of fresh coriander

-½ fresh jalapeño (optional)

-1 garlic clove

-½ cup creme fraiche

-1 tsp powder vegetable seasoning 

- Salt and pepper to taste.

1 Blend all the ingredients, except the salt until smooth. Taste and add salt if needed. 

2 Cook the sauce in a small-medium saucepan with no oil. Bring the sauce to a boil and simmer for at least 10 minutes.


To Serve

- Plain rice and a simple salad are the perfect way to enjoy these meatballs and sauce. They are so tasty that they don't need anything else but a simple side to make it a perfect meal.

- This sauce has so much potential! We can see it working perfectly well over salmon, tuna steaks, pork, chicken and even a vegetarian dish. The tomatillos and pickled jalapeños are a fantastic flavourful combo.
