Chipotle Adobo Tempeh Bowl

This is an amazing recipe, full of flavours, textures, and so filling! The chipotle adobo works great with the tempeh and the beautiful cilantro dressing, a favourite of ours, goes with everything! Both sauces are incredibly easy to make and the flavour payoff is off the charts.

Chipotle Adobo Tempeh

-2 tbsp Diced Chipotles

-2 tbsp tahini

-2 tbsp lemon juice

-3 tbsp extra virgin olive oil

-1 garlic clove

-1 tsp salt

-400g tempeh, cut into thin slices

1 Blend together the chipotles, tahini, lemon juice, olive oil, garlic clove, and half the salt until smooth. Adjust seasoning to taste.

2 Bring the heat to medium-high on a grill pan. Brush the tempeh slices with the chipotle adobo on both sides and grill for 4 to 5 minutes on both sides. We are not boiling or marinating the tempeh because the slices are thin enough that it will cook nicely, however, you can do that ahead if it works best for you.

3 Once the tempeh has been grilled, transfer to a plate and brush once more with the chipotle adobo.


Creamy Tomatillo Dressing

-2 tomatillos

-a handful of cilantro included stalks

-1 pickled jalapeno

-1 garlic clove

-¼ cup creme fraiche or plant-based cream

-2 tbsp lemon juice

-3 tbsp extra virgin olive oil

-2 to 3 tbsp pumpkin seeds 

-salt and pepper to taste

1 Blend all the ingredients with just 2 tablespoons of pumpkin seeds, a pinch of salt and pepper until smooth. Taste and add more pumpkin seeds if the dressing needs more thickness. Adjust seasoning to taste. 

 

To Serve

-Grilled vegetables

-Black rice or quinoa

-Fresh jalapeno and radish slices

-Pumpkin seeds

1 Serve the chipotle adobo tempeh over your favourite grilled vegetables, rice or quinoa and any fresh vegetables you have. Finish by adding this beautiful tomatillo dressing and serve with extra chipotle adobo. 


Notes

  • The chipotle adobo is amazing to cook with but also serves as a dipping sauce. Chipotles and tahini are an amazing combination of flavours, this is just one more example of it.
  • This tomatillo dressing has all the flavour from tomatillos, all the tanginess from pickled jalapenos and all the texture from the pumpkin seeds. A super easy but super tasty dressing that goes well with everything.
