These carrots are the perfect side to many dishes! The glaze is made with chipotles, orange juice, ginger and a touch of sweetness. Even when the glaze seems bold, it mellows down quite a bit during cooking and mixes beautifully with the sweetness from the roasted carrots.

Chipotle Glazed Carrots

-6 to 8 carrots, peeled

-2 tbsp olive oil

-1 tbsp chipotles in adobo or sweet chipotles

-3 tbsp orange juice + zest from the orange

-1 tsp pomegranate molasses or honey

-1 tsp grated ginger

-salt to taste

1 Set oven to 180C

2 Blend all the ingredients until smooth. 

3 Arrange the carrots flat on a baking dish and brush the chipotle glaze over them. Bake until caramelized and cooked to your liking, anything from 25 to 35 minutes, depending on the size of the carrots. Baste with more chipotle marinade halfway. 

4 Make sure to keep some of the marinade to brush the veggies once they come out from the oven for added shine and flavour.

 

Notes

  • This glaze is perfect for sweet potatoes, roasted fennel, parsnips and more!
  • The glaze works great for protein such as salmon, chicken or tofu.
