These tacos are unusual, yes, but also amazing! There is sweetness from the plantains, savoury from the beans and feta, a tangy twist from the pickled onions and everything is hugged by the sweet pasilla salsa. If you like experimenting, try these ones! There’s hardly any cooking involved!

Sweet Pasilla Salsa

-3 Pasilla chillies

-2 Tbsp piloncillo syrup or brown sugar dissolved in the same amount of water.

-¼ white onion

-1 garlic clove

-¼ cinnamon stick

-2 Tbsp vegetable oil

-½ cup of water

-salt to taste

1 Clean the chillies using a damp cloth and remove the stem and seeds. 

2 Add the oil to a frying pan and once hot, place the onion, garlic, chillies and cinnamon. Fry them until they become fragrant. Move constantly to avoid burning the ingredients. Ideally, you’ll get some browning in the onions and garlic. 

3 Transfer all the ingredients (including any leftover oil) to a blender and add the water, syrup and about half a teaspoon of salt. Blend until smooth and taste. Add more salt if needed.

Chipotle Plantains

-2 plantains, sliced

-2 tbsp Chipotles in Adobo sauce

-2 tbsp unsalted butter

-Salt to taste

1 In a frying pan, melt the butter and stir in the chipotle adobo sauce. Once melted, add the plantain slices and let them cook for about 5 minutes on each side. They should be fork-tender and golden brown on both sides. Sprinkle with salt while they are warm and set aside.

Chipotle Plantain Tacos with Sweet Pasilla Salsa

-Corn tortillas

-Whole Black Beans La Costena

-Chipotle plantains

-Feta cheese, crumbled

-Pickled onions

-Sweet pasilla salsa

1 Warm the tortillas and black beans while you prepare the plantains

2 Add a nice amount of drained black beans to the tortilla, pile plantains on top and dollop a good amount of sweet pasilla salsa. Sprinkle with feta cheese and top with pickled onions.


Notes

- Beans and plantains are a delicious combination. They go so well together!
- This sweet pasilla salsa is a beautiful thing. Only a few ingredients transform this into a very interesting and different salsa. Thanks to the cinnamon in it the scent and flavours are almost chocolatey. There is a very mild spice to it, it’s all about flavour and texture here. Ideally, you can find piloncillo (pure cane sugar) but brown sugar works great too. 
- There are so many flavours and textures going on here! These tacos are sweet, savoury, tangy. Every element in them is obvious and blend together in a beautiful way with every bite.
