Easy Chicken Tacos Dorados

These tacos are incredibly easy to make and they are perfect to use any leftover chicken, veggies, or tortillas. The little twist is to add a light sprinkle of Tajin and Adobo Seasoning to the tacos as soon as they come out from the oil. This small change makes these tacos exponentially tastier!

Easy Chicken Tacos Dorados

-10 corn tortillas

-2 chicken breast, cooked and shredded. Leftover chicken works great here!

-vegetable oil, the necessary

-Adobo Seasoning, to taste

-Tajin to taste

1 Warm the corn tortillas in the microwave for a few seconds or until they are soft and pliable. You can do this on a hot pan for a few seconds just until they are soft. 

2 Add enough vegetable oil to a frying pan and bring up the heat to medium.

3 Add about a tablespoon of shredded chicken to the tortilla and fold it in half. Do this with all the tortillas until you use all the chicken. 

4 Fry the folded tacos in batches until they are golden brown on all sides. Remove and place on a paper-lined plate or a rack to drain any excess oil. While they are hot, sprinkle with a light shake of Tajin and Adobo Seasoning on both sides. This will add a delicious twist to the tortillas. 


To Serve

-cabbage, finely sliced to taste. You can use lettuce instead. 

-1 cup cherry tomatoes

-1 jalapeno, finely diced

-2 tbsp white onion, finely chopped

-2 tbsp fresh coriander, finely chopped

-1 whole avocado, finely diced

-fresh lemon or lime juice

-salt and black pepper to taste

-creme fraiche

-feta or fresh cheese, crumbled

-radishes

1 In a small bowl, mix the tomatoes, jalapeno, onion, coriander, and avocado. Drizzle a bit of lemon or lime juice, salt, and pepper to taste.

2 Serve the tacos by adding cabbage or lettuce inside them and dressing them with avocado pico, crumbled cheese, and a creme fraiche dollops.

 

Notes

  • These tacos are perfect for sharing or even as appetizers! Arrange them on a large serving plate and let everyone help themselves. 
  • As we mentioned before, these fried tacos are perfect to use any leftovers that need to be used. Leftover chicken, beef, roasted vegetables, and even beans with cheese!
