La Costeña Chipotle in Adobo Pork Ribs

Nothing beats a good and delicious platter of chipotle in adobo ribs. It is the best sharing dish. Either you are gathering with friends to watch a match on tv or you just want to serve something on the table for an informal gathering. This dish is a winner!

 

INGREDIENTS

  • 220g tin La Costeña Chipotle Peppers in Adobo
  • 2 kg pork ribs, cut individually
  • 1tsp paprika
  • 1tsp ground cumin
  • 1 tin chopped tomato
  • 1 medium onion 
  • 2 garlic cloves
  • 2 cups dark beer 
  • 1 tbsp tomato paste
  • 2 tbsp brown sugar
  • 4 tbsp red wine vinegar
  • 3 tbsp Worcestershire sauce
  • ½ tbsp salt

 

METHOD

Star by making the La Costeña Chipotle en Adobo sauce to brush the ribs. Place the tomatoes, onion, garlic and chipotle in adobo, tomato paste, brown sugar, Worcestershire sauce, red wine vinegar and salt in a blender. Blend until smooth. Keep a 1/2 of the chipotle in adobo sauce on the side and the rest it will be use to brush the ribs.

Mix the paprika, cumin and salt, rub the ribs with this mixture and place on a baking tray, pour the beer and cover with aluminium foil, place in a preheat oven to 160C and cook for 1 hour.

Take the ribs out, remove the foil and using a cooking brush, brush them with the Chipotle in Adobo sauce. Put them back in the oven and repeat the process after 30 minutes, do this step twice. By now, the ribs should be nice and very tender. Serve them on a large platter with some lime wedges. Enjoy them with friends and some really cold cervecitas (beers).
