One-Pan meals are amazing! They can be put together very easily and the result is always tasty and wholesome. In this case, the rice absorbs all the flavours from the ingredients while the chicken slowly cooks and stays juicy and tender inside but nicely golden brown outside. This is a fantastic way to include poblano peppers at dinner time.

One-Pan Lemon and Poblano Chicken Rice

-2 chicken breast

-½ cup rice

-1 Poblano Pepper San Miguel, stem and seeds removed, diced

-1 large carrot, diced

-½ red pepper, diced

-1 small white onion, sliced

-1 or 2 garlic cloves, crushed

-1 Lemon, zest and juice

-1 tsp ground coriander

-1 tsp ground cumin

-1 tsp garam masala

-1 tsp oregano

-1 ¼ cups of water

-Salt and pepper to taste or Lemon Pepper Seasoning

-½ cup chicken stock (optional)

-vegetable oil

-1 tbsp butter

1 Add a light drizzle of oil and the butter to a large, heavy-bottom pan and bring up the heat to medium-high.

2 Season the chicken breast on both sides with salt and pepper or the Lemon Pepper Seasoning, this one works great since we’ll be playing with lemony flavours in this recipe.

3 Sear the chicken on both sides until golden brown and remove from the pan. Add the carrots to the pan and cook for 5 minutes.

4 Add the onions and the peppers and cook for  5 more minutes. Stir often. Add the rice, garlic, lemon zest, coriander, cumin, masala, oregano and make sure the spices coat all the ingredients in the pan for about 3 minutes.

5 Add the water and bring it up to a boil. If you are using chicken stock, make sure to not exceed the amount of liquid which should be 1 cup and ¼ total, so substitute some of the water for the chicken stock. 

6 Add about half of the lemon juice, salt and pepper to taste. Once happy, add the poblano peppers and scatter them evenly. Return the chicken to the pan on top of the rice and vegetables. 

7 Cover the pan, bring down the heat to the lowest setting and cook for 15 minutes. After this, turn off the heat and let it rest for another 15 minutes or until ready to serve.


To Serve

  • Tzatziki or just plain Greek/Turkish yoghurt works great with these flavours.
