This is a super easy but effective Mexican twist on a classic English breakfast. Everything goes into the same pan, hardly any mess, all the flavours cooking together. Salsa Mexicana is one of the tastiest and mildest of our salsas and goes so well with the sweetness from the baked beans and the saltiness from the crispy bacon. Serve with crusty bread (or tortillas) and enjoy!
One-Pan Spicy Full English Breakfast
-bacon or lardon, cut into small bites
-salt and pepper
1 Set a pan on medium heat, add the sausages and cook for 10 to 15 minutes. Turn often so all sides blister.
2 Add the bacon bits to the side and cook for a few minutes until it starts to brown. While the bacon and sausages are cooking, add the tomatoes so they start blistering and cooking. Once the bacon bits are golden brown, add baked beans and salsa Mexicana to taste. Mix a little and crack the eggs on top. Add salt and pepper to taste and cover. Cook until the egg is done to your liking.
3 This whole process can also be done in the oven. Set oven to 180C and cook the sausage first, then add the bacon and once golden brown, add the beans, salsa and egg. Cook until the egg is ready.
