Two incredibly delicious sauces that will transform any piece of chicken from a simple meal to a stunning one. The red sauce is made with soy sauce, sweet chipotles and lemon juice making it intense and so moreish. The green sauce is all about fresh and pickled jalapeños, coriander, garlic and greek yoghurt making it a zingy, fresh and creamy sauce.  Both of these sauces have so much potential and we are sure that we will keep using them in future recipes.

Red Sauce Chicken

-500g chicken pieces. Thighs are recommended but breast strips or wings work great too. 

-3 garlic cloves

-¼ cup soy sauce

-2 tbsp lime juice (lemon juice works too)

-1 tbsp extra virgin olive oil

-1 tbsp Sweet Chipotles

-1 tsp ground cumin

-½ tsp oregano

-½ black pepper

1 Blend the garlic, soy sauce, lime juice, olive oil, chipotles, cumin, oregano and pepper until smooth. 

2 Marinate the chicken with ⅔ of the mixture. The longer you marinate, the better. Anything from 2 hours to overnight works. Save the rest of the sauce to brush the chicken once is cooked.

3 Once the chicken has been marinated, cook in the oven at 260C for 45 minutes or until cooked through. If the chicken starts to brown too much, make a tent with aluminium foil until it’s done. 

 

Green Sauce

-1 fresh jalapeno

-2 pickled jalapenos

-cup fresh coriander

-2 green onions

-2 garlic cloves

-¼ cup creme fraiche or mayonnaise

-¼ cup greek yoghurt

-3 tbsp lime juice

-salt and pepper to taste

-¼ cup extra virgin olive oil

1 Mix the jalapeno, pickled jalapenos, coriander, onions, garlic, creme fraiche (or mayonnaise), yoghurt and lime juice until everything is combined. Slowly add the olive oil until the mixture becomes silky and smooth. Taste and add salt and pepper to taste. Keep this sauce refrigerated until ready to serve.


Serving Suggestions

-White rice

-Chives

-Broccoli or any other vegetables you like

1 Brush or drizzle over the chicken more of the red sauce once you serve and do the same with the green sauce on top. The sauces are bold and flavourful, perfect with white rice and steamed vegetables.

  • The sauces in this recipe are bold and incredibly tasty. Plain rice is the perfect way to enjoy them.
  • The green sauce is a fantastic dressing for salads or anything you like. It is fresh, creamy and tasty! It goes so well with so many things.
  • This red sauce is perfect to marinate tofu, aubergines and more. Intense flavours come from the soy sauce, garlic and sweet chipotles that are perfect for any Asian inspired dish without being overly hot. 
  • If you haven't used sweet chipotles, you are in for a surprise! They are amazing, less spicy and zingier than the usual chipotles in adobo. Absolutely worth trying!
