Roasted Cauliflower with Mole Verde Recipe

This delicious Mole Verde is an amazing dish if you want to serve something different and special. Make with pumpkin seeds and other incredible ingredients is the perfect way for a wonderful Mexican dinner.

INGREDIENTS

  • 1 jar La Costeña Mole Verde paste
  • 2 tbsp fajita season from Sazon Natural
  • 1 large cauliflower head
  • 5 cups water
  • 6 tbsp pumpkin seeds
  • 3 tbsp rapeseed oil

 

Method

Preheat the oven to 180 degrees C fan. Cut the cauliflower head into small florets. Place them in an oven tray and sprinkle the fajita season from Sazon Natural and the rapeseed oil and mix. Roast for 25 minutes.

In the meantime, open the mole jar, by putting the glass jar upside down on top of a folded kitchen paper towel, then using a small sharp knife, insert the knife on the edge of the lid and open them. Then scoop the mole out and place it in a large saucepan and add 5 cups of water. Using a balloon whisker, whisk the mole slowly until everything is dissolved.

 

When the mole is hot and dissolved, turn the heat off and plate it. Pour some mole on a plate and put some roasted cauliflower florets, sprinkle one tbsp of sesame seeds, enjoy it with some rice and warm Mextrade corn tortillas.
