This is such a wholesome meal, easy and delicious, made with simple ingredients that make a soul-warming dish. Just like the ones from back home. The salsa verde, made with tomatillos, is a classic and basic recipe that you can take much further by adding your own touches. Sky’s the limit!

Salsa Verde

-5 Tomatillos

-2 garlic cloves

-2 Arbol chillies *optional

-Handful of cilantro

-Salt and black pepper to taste

1 Blend all the ingredients together and reserve. 


Salsa Verde Beef Stew

-2 medium potatoes, cut into chunks

-2 medium carrots, cut into chunks

-½ white onion, roughly chopped

-350g chuck steak cut into 3cm cubes 

-½ cup plain flour

-1 Tbsp salt

-1 Tbsp pepper

-½ cup beef stock

-vegetable oil

-1 Tbsp unsalted butter

1 In a bowl, mix the flour and salt and pepper. Add the beef pieces and coat very well. Remove the flour excess.

2 Add the vegetable oil and butter to a large skillet on medium-high heat. Sear the beef pieces on all sides and remove them from the pan.

3 Add the carrots to the skillet and saute for 6 minutes. Add the potatoes and cook for 6 more minutes. Add the onions and cook for further 5 minutes.

4 Add the salsa verde and the beef stock. Stir and let it come to a boil. Reduce the heat to a minimum, adjust seasoning to your taste and return the beef pieces to the skillet. Cover and let it cook for at least 40 minutes or until the potatoes are cooked through and the beef tender. 

Notes

  • Even when chuck steak is suggested, this dish would be amazing with short ribs too.
  • The salsa verde presented here is delicious as it is thanks to the tomatillos, however, it can be used as a base to make it with any other protein.
  • Using Arbol chillies will bring the spiciness right up, so avoid if you don't like spicy food. 
  • You can use fresh jalapeños or even chipotles en adobo. Adding any of these ingredients will change the overall flavour of your dish in a delicious way.

-diced onions

-coriander

-jalapeno slices

-avocado slices

-corn tortillas

-rice or beans 

1 Serve hot over rice or with beans. Sprinkle over some diced onions, coriander and jalapeno slices. This stew makes a delicious taco filling too!
