Take coronation chicken, add our beautiful sweet chipotles instead of chutney and transform it into a silky, warming, delicious sauce. The result is a mouth-watering curry that will make you very, very happy. Sweet chipotles keep being one of our most used ingredients lately and we plan on giving you plenty of ideas on how to use them.

Smoky Coronation Chicken Curry

-450g chicken thighs or breast, cut into bite-size chunks

-1 cup cream

-½ chicken stock

-2 tbsp natural Greek yoghurt

-2 to 3 tbsp Sweet Chipotles 

Note: If you don't have Sweet Chipotles, you can use regular Chipotles in Adobo and honey to taste. 

-3 spring onions, cut into bite-size chunks

-100g green beans, cut in half

-¼ cup coriander, roughly chopped

-2 garlic cloves, crushed

-1 tsp ginger, grated or minced

-½ lemon juice, to taste

-1 ½  tbsp curry powder, heaped

-salt and pepper

-garlic powder

-onion powder

-1 tbsp butter

-vegetable oil

1 Season the chicken with salt, pepper, curry powder (about ½ tbsp), onion and garlic powder to taste on all sides. 

2 Add the butter and a drizzle of vegetable oil to a large pan over medium-high heat and once hot, sear the chicken pieces on both sides. Once nicely brown, remove the chicken and set it aside.

3 Add a little bit more oil, if needed, and add the green beans and spring onions to the pan on medium-low. Fry the veggies for about 2 minutes and add the garlic and ginger, moving constantly to avoid burning. Add the remaining 1 tablespoon of curry, and stir well. Pour the chicken stock, cream, sweet chipotles and coriander. Mix and bring to a boil. Add a good squeeze of fresh lemon juice, taste and adjust seasoning. Bring the heat to the lowest setting, return the chicken pieces to the curry sauce and bring to a boil. Cover and cook for 25 minutes or until the chicken is cooked through.

4 Add the yoghurt, before serving, and mix with the curry. Adjust seasoning as needed.

Notes

  • Sweet chipotles are such a hidden gem! They are like a spicy chutney with a beautifully sweet and smoky flavour, unique to chipotles in adobo. 
  • Usually, coronation chicken includes chutney but our recipe switches it for sweet chipotles bringing a beautiful complexity to the already tasty curry sauce. We can’t recommend trying these on your recipes.
  • This sauce can be tailored as a vegetarian meal! All the flavour comes from spices and sweet chipotles.
