In México, we spice up nuts, seeds, and pulses and eat them as snacks. We just love spicy and crunchy things! It is this idea that inspired us to use these delicious spicy, roasted chickpeas in a fun and delicious way. This salad is everything but boring. It has the perfect combination of fresh ingredients, roasted and crunchy ones. Every flavour complements the other. This is a fantastic lunch or dinner option with a beautiful Mexican Twist. We could eat this every day, it is that good.

Golden Beets Salad with Spiced Chickpeas

Salad

-4 golden beets (or any other colour), roasted and quartered

-2 cups beet leaves, washed and roughly chopped. Kale or spinach is a good substitute.

-1 cup bulgur, cooked

-½ cup red peppers, diced

-¼ onion, diced

-2 garlic cloves, crushed

-olive oil

-salt and pepper to taste

1 Add a little bit of olive oil to a pan on medium-high heat and add the beet leaves (or spinach or kale) and stirfry for 3 minutes. Add the crushed garlic and fry for a few seconds before adding the diced onions and peppers. Season to taste and cook for no more than 10 minutes. The vegetables should be crunchy. 

2 Toss the veggies with the bulgur in a bowl. Reserve the beets to be served last. 


Spiced Chickpeas

-400g chickpeas, rinsed, drained, and dried.

-1 to 2 tbsp olive oil

-1 tbsp Adobo Seasoning

-½ tbsp Tajin

-1 tsp smoked paprika

1 Mix all the ingredients until the chickpeas are covered. If using the oven, set it to 180C and bake the chickpeas until crispy, about 15 minutes. Check often. If using the air fryer, set it to 200C for 8 minutes. Shake halfway and stop it if you hear that the chickpeas start to pop. Set aside


Dressing

-2 tbsp extra virgin olive oil

-1 to 2 tbsp fresh lemon juice

-1 ½ tbsp red wine vinegar

-1 tsp honey

-¼ tsp garlic powder

-¼ tsp onion powder

-salt and pepper to taste

1 Mix all the ingredients with a whisk and adjust seasoning to taste. Reserve.

 

To Serve

1 Serve the bulgur salad and top up with roasted beets. Drizzle with the dressing to taste and sprinkle on top with the spiced chickpeas. We served ours with a side of tzatziki and it was just perfect.
