This is a super delicious, easy and quick dish that can be made with these or any other vegetables you have in your fridge. The key is the fantastic combination of ginger, soy sauce, sesame oil, rice vinegar and the salsa macha. Salsa macha is at the end of the day, an oil-based chilli and peanuts sauce, similar in a way to other beautiful salsas from Asia where this dish takes inspiration from. This is just one more way to use it as a condiment instead of salsa on its own.

Spicy Beef Stir Fry

-300g ground beef (could be pork or a mix of pork and beef)

-1 large carrot, finely diced

-2 cups white cabbage, thinly sliced

-2 cups kale, roughly chopped

-3 tbsp spring onions, sliced

-handful of coriander, roughly chopped

-1 garlic clove, crushed

-1 tsp ginger, grated

-3 tbsp salsa macha (or more to taste)

-2 tbsp soy sauce

-1 tbsp rice vinegar

-1 tbsp sesame oil

-lemon juice to taste

-salt and pepper to taste

1 Bring a large pan up to medium-high heat and add the sesame oil and mince. Brown the beef while breaking it down. Add a pinch of salt and pepper and once it starts to cook, add the garlic, ginger and the salsa macha. Mix very well before adding the rice vinegar, one tablespoon of soy sauce and about a tablespoon of fresh lemon juice. Continue cooking for 10 minutes in medium-low heat. Check to season and add more salsa macha, soy sauce or lemon juice to your taste. Remove the beef from the pan and set it aside.

2 Using the same pan, add the carrots and cook for 5 minutes on medium-high heat. Once they start to soften add the kale and cook for further 5 minutes. Add the cabbage, spring onions and coriander. Add one tablespoon of soy sauce and a good drizzle of lemon juice. Stir well and cook until the cabbage is cooked to your liking. 

3 Return the beef to the pan and stir everything together. Cook for 5 to 10 minutes more.
