Chilaquiles are one of the most traditional dishes from Mexico and even when is common to have them for breakfast, they are not limited to morning time, they are also a popular lunch and dinner. In essence, chilaquiles are corn tortillas fried or baked until crispy and then covered with sauces. The most popular sauces to use for chilaquiles are red, green and mole. They are usually topped with eggs or pulled chicken. It is a hearty dish and there are many ways to make them. Today we want to share with you the easy and delicious way we make ours.

Ingredients

  • 8 Corn Tortillas
  • 2 Free Range Eggs
  • 1 250g Bottle of Salsa Mexicana La Costeña
  • Pepper
  • Spice Mix ( We baked the tortilla chips using the same spice mix and method shown here )

Instructions

Preheat the oven to 180 C

Prepare the tortillas using this method. Once the tortilla chips have cooled down a little, place them in a bowl and coat them with a dose of Salsa Mexicana La Costeña. The amount you use is totally up to you. We used 1/3 of the bottle because we added more salsa before serving. Once the tortilla chips are coated in salsa, transfer them to an oven safe dish or skillet. Make space for the eggs and sprinkle with some freshly ground pepper. Bake in the oven for 20 minutes or until the eggs are cooked the way you like them. We served our chilaquiles with Whole Black Beans La Costeña. You can top your chilaquiles with more salsa, crumbled feta cheese or cream.

Notes

  • You can fry the tortilla chips instead of baking them.
  • You can make your own salsa or use any other of our salsas such as Green Salsa for a tangy spicy flavour.
  • Our salsas are seasoned so most likely you won’t need to add any extra salt.
