We love salads! Not boring salads, mind you! We love delicious, tasty salads full of flavour and interesting textures. This one is just that. Only a few easy steps are keeping you from it! This one has us longing for Spring but here we are, having sunshine on a plate in the middle of winter! The crunchy feta bites are just incredible with the softness of the roasted veggies. Add to that this beautiful Hot Honey and all you need is a glass of white wine by your side!

Fried feta Salad with Hot Honey

-1 cup peppers, chopped

-1 cup courgette, diced

-½ cup red onion, diced

-1 cup small tomatoes

-1 cup aubergine, diced

-2 garlic cloves, lightly crushed

-olive oil, to taste

-salt and pepper, to taste

-oregano, to taste

1 Set oven to 200C

2 Add all the veggies to a baking tray. Drizzle with olive oil and add seasonings to taste. Toss until everything is evenly coated. 

3 Bake in the oven for 25 minutes or until the vegetables are nicely roasted.


Crispy Feta

-200g feta, cubed. Firm feta cheese works best for this recipe.

-½ cup flour

-½ milk

-⅓ tsp of garlic and onion powder

-½ tsp oregano

-Tajin, to taste

-⅔ cup panko or regular breadcrumbs

-vegetal oil, as needed

1 In a bowl, whisk together the flour, milk and seasoning until evenly incorporated.

2 Add the panko to a second bowl next to the flour mix.

3 Dip the feta cubes into the flour mix and coat evenly. Transfer to the panko bowl and lightly press the panko on all sides. Continue until all the feta has been coated.

4 Add a bit of oil to a frying pan until the bottom has been covered. Once the oil is ready, fry the feta cheese cubes for around 2 minutes. Turn them around during this time until all sides are golden brown.

5 Transfer the fried feta cubes to a rack or a paper-lined plate to drain any oil excess.


Hot Honey

-1 cup honey

-3 to 5 Arbol Chiles

1 Slice the Arbol chiles into small pieces to expose the inside and seeds.

2 Pour honey onto a small saucepan together with the Arbol chiles. Bring up to a simmer and just as the first bubbles appear, turn the heat off. Do not allow it to boil properly since this will turn the honey hard.

3 Remove the honey from the heat and allow it to cool down before straining and storing it in a jar.


Notes

  • This Hot Honey is a delicious addition to any salad, dressing, or even pizza.
  • You can keep this in a sealed jar for weeks. 
  • You could leave the chiles in the honey, this can make the honey spicier as time goes on. 
  • We used five chiles and the honey is hot but not overly hot. Adjust the number accordingly. 

 

To Serve

-Hot Honey

-roasted veggies

-crispy feta

-fresh lemon 

1 Add a little bit of lemon juice to the roasted veggies and toss around. They should be juicy enough not to need any extra dressing. Add salt and pepper if needed.

2 Serve with the fried feta on top and drizzle with the spicy honey to taste.
