Mole is one of our most precious dishes. A tradition in its own right. It is delicious, rich and silky. A precious sauce that goes so well with chicken and rice. This is another way to mix these ingredients and we hope you love it as much as we do.

Easy Mole Negro

Sauce

-150g Mole Negro Mayordomo

-150g chicken stock or water

1 Add the water and the mole paste to a medium saucepan set to medium heat. Whisk until they combine into a silky sauce. Keep warm until serving.


Notes

- In Mexico, is common to add chocolate to the sauce. This adds flavour and extra sweetness. We think this mole comes out perfect without the extra chocolate, but it is something you could experiment with.

- The flavour will slightly change depending if you use water or chicken stock to dissolve the mole paste. Taste and adjust any seasoning accordingly. 


Chicken Meatballs

-500g ground chicken

-1 ¼ cup breadcrumbs

-1 tsp ground coriander

-1 tsp Adobo Seasoning

-1 tsp salt

-1 tsp black pepper

-1 tbsp chipotle in adobo (just the adobo)

-2 tbsp olive oil + some extra

-1 egg

1 Mix half the breadcrumbs with the ground coriander, Adobo Seasoning, salt and pepper.

2 Place the ground chicken in a large bowl and separate it a bit with the help of two forks. Sprinkle the breadcrumbs with the seasoning mix and work the chicken with the forks. Once it has been roughly incorporated, add the rest of the breadcrumbs. 

3 Add the olive oil, egg and adobo from the chipotles. Roughly mix everything with the forks. Add a little bit of olive oil to your hands and mix the chicken mixture one last time. Divide the mixture so you end with roughly 12 meatballs. Transfer them onto a paper-lined baking tray as you roll them in your hands.

4 Airfryer - Fry for 12 minutes at 180C. Oven - Bake at 180C for 25 minutes or until golden brown and cooked through. 


To Serve

-rice

-onion, thinly sliced

-sesame seeds

 

Notes

  • This mole negro is so easy to use. The recommended ratio is equal parts of mole paste to water or chicken stock. You can adjust the amount as needed.
  • You can use any chicken pieces instead of the meatballs. This is how traditionally mole is served. We love these chicken meatballs and decided to use them with this mole sauce. The result is delicious, that’s why we recommend them.
  • Rice is the side dish of preference for mole! We suggest white rice plain or with veggies. Mole sauce is a delicious, rich, velvety sauce. The star of the show!
