A super tasty and easy way to make use of any leftover chicken! This adobo is full of flavour and a touch of smokiness from our beautiful chipotles in adobo. This works like a charm with some soft brioche buns, pickled onions, and some crunchy cabbage.
Easy Pulled Chicken Sandwich
-300g leftover cooked chicken, shredded
-2 Chipotles in Adobo, finely chopped
-2 tbsp tahini
-2 tbsp vegetable oil
-1 1/2 tsp sweet soy sauce
-1 tsp vinegar
-½ tsp ground cumin
-½ tsp ground coriander
-½ tsp onion powder
-½ tsp garlic powder
-salt to taste
1 In a small bowl, mix the chopped chipotles, tahini, vegetable oil, sweet soy sauce, vinegar, ground cumin and coriander, onion, and garlic powder. Mix with a whisk until smooth. Add salt to taste.
2 In a frying pan on medium, add the shredded chicken and pour over the sauce. This should have enough oil to fry the chicken. Add more if needed. Stir until all the chicken is covered in the sauce. Cook until the chicken gets those lovely burnt bits or to your liking.
To Serve
-brioche buns, lightly toasted
-pulled chicken
-mayonnaise, to taste
-cabbage, thinly sliced
-pickled onions

1 Lightly toast the buns and add mayonnaise, a generous amount of cabbage, and top with plenty of pulled chicken. Top with pickled onions and if you like it extra spicy, add a nice amount of hot sauce just like our Spicy Lime Sauce.
Notes
- You can easily double the recipe if you have more chicken to work with. Everything is adjustable to your taste.
- This amount will be perfect for four regular-sized buns.
- If you don't have sweet soy sauce, try mixing regular soy sauce and a touch of honey to taste. A little bit of sweetness works really well here and helps to caramelize those lovely burnt ends in the chicken.
