Fried corn tortillas are amazing and anything you fill your taquitos with will be delicious, however, for an easy and amazing filling, look no further than this recipe. Easily seasoned minced beef with refried beans with equally easy toppings for those days when we need a really quick Mexican fix in our day.

Easy Refried Chilli Taquitos

-10 to 12 corn tortillas

-½ can Refried Beans

-300g minced beef

-⅓ white onion, finely diced

-1 large jalapeno pepper, finely diced (seeds removed, optional)

-fresh coriander, to taste, roughly chopped

-2 tbsp Diced Chipotles in Adobo

-½ tsp oregano

-1 tsp garlic powder

-salt and pepper, to taste

-vegetable oil, the necessary

-cheddar cheese, optional

1 Set a medium pan to medium-high heat and once hot add a little drizzle of vegetable oil, about half a tablespoon. Add the onions and jalapenos to the pan and cook for about 5 minutes.

2 Add the minced beef to the pan and break it apart as it cooks for a few minutes until there is no more pink in the beef. Season with the chipotles, oregano, garlic powder, salt and pepper. Remember that you will add refried beans to the mixture so make sure to not add too much salt at this stage. Stir often and continue cooking for about 8 minutes. Add the coriander and mix. 

3 Add the refried beans to the beef and mix thoroughly, lower the heat to medium-low, cover with a lid and cook for ten minutes. 

4 Adjust seasoning to taste and keep hot. 

5 Warm the corn tortillas just enough to make them soft. Add plenty of the beef mixture to half of the tortilla, fold in half and continue until there are no more beans. You can add cheese at this stage too if you are using it. 

6 Set a frying pan to medium-high heat and add just enough vegetable oil to cover the bottom of the pan. Once hot, fry the folded tacos on both sides until golden brown. Work in batches to not overcrowd the pan. Add more oil if needed as you go. 

7 If necessary, remove any excess oil with paper towels before serving.


To Serve

Guacamole or fresh salsa, creme fraiche and Green Salsa
