This is such a delicious and easy side dish to any meal needing a touch of Mexican flavours. Perfect to serve with chicken, fish and even as part of your burritos. You can also enjoy it as a lovely light lunch by just adding eggs on top as we did!

Green Poblano Rice

-1 cup rice, rinsed and drained

-2 cups stock or water

-½ small onion

-1 garlic clove

-a handful of coriander

-1 large poblano pepper, seeds & stem removed

-salt and pepper to taste

-½ tbsp vegetable oil

1 Blend one cup of stock or water with the onion, garlic, coriander and poblano pepper until smooth.

2 Fry the rice with the oil in a pan over medium heat. Stir often until the rice changes colour to slightly golden. Pour the green sauce over plus the remaining stock. Stir and bring to a boil. Season with salt and pepper to taste if needed. 

3 Lower the heat to a minimum and cover the pan with a lid. Cook the rice according to the packaging instructions. Ours needed 15 minutes. Allow the rice to rest for further 10 minutes with the heat off. Fluff the rice with a fork before serving.

 

Serve this delicious rice as a lovely Mexican side to fish, chicken, veggies or even on its own with some eggs on top. We served ours with crumbled feta cheese on top and a generous amount of Salsa Macha. Enjoy!
