This is one of our favourite potato salads out there. It is so tasty and with a delicious mixture of textures from beginning to end. Using pickled jalapenos here adds so much flavour! This is a perfect side salad that goes with everything. 

Jalapeno Potato Salad

-500g potatoes, cubed

-water, enough to cook the potatoes

-a pinch of salt

-½ red onion, sliced

-2 spring onions, sliced

-1 small red pepper, diced

-fresh herbs, we used dill and parsley, finely chopped

-radishes, optional

-pickled jalapenos, to taste


Dressing 

-2 tbsp olive oil

-2 tbsp mayonnaise

-½ lemon, juiced

-2 tbsp pickled jalapeno vinegar

-1 tsp garlic powder

-1 tsp dried oregano

-salt and black pepper, to taste


1 Rinse the potatoes a couple of times before cooking them in plenty of water and a pinch of salt until fork tender. 

2 To a bowl, add the olive oil, mayonnaise, lemon juice, pickled jalapeno vinegar, garlic powder, oregano and whisk until incorporated. Season with salt and black pepper to taste.

3 Add the sliced red onions to the dressing and let them marinate for a few minutes. 

4 Once the potatoes are ready, strain the water off and transfer them straight to the dressing while they are hot. This will allow them to absorb the flavours better.

5 Let the potatoes sit with the dressing for 5 minutes and then add the spring onions, red pepper, radishes and herbs. Toss everything until evenly combined. 

6 Add slices of pickled jalapenos last and enjoy!
