Transform simple tuna salad into a really, really good one! This salad is fresh, filling, delicious and so easy to make. Add a couple of Mexican Twists here and there and you'll have your new favourite tuna salad to date. 

Jalapeno Tuna Salad

-1 115g tinned tuna 

-2 cups lettuce, roughly chopped

-1/2 cup plum or cherry tomatoes, halved

-1/4 cup radish, thinly sliced

-1/2 cucumber, thinly sliced

-2 spring onions, thinly sliced

-1/4 cup edamame

-1/4 cup cilantro, roughly chopped

-avocado, sliced

-1/4 cup pickled jalapenos, chopped


Dressing

-3 tbsp mayonnaise

-1/2 tbsp mustard

-1/2 lemon, juiced

-2 tbsp pickled jalapeno vinegar

-1/2 tsp onion powder

-1/2 tsp garlic powder

-salt and pepper, to taste

-Piko Piko or Tajin to taste

1 Mix the mayonnaise, mustard, lemon juice, vinegar, onion powder and garlic powder until smooth. Season to taste with salt, pepper and Piko Piko or Tajin. 

2 Plate the lettuce, tomatoes, radish slices, spring onions and edamame mixing them as you layer them. 

3 Top the salad with tuna chunks, avocado slices and jalapenos. 

4 Drizzle generously with the dressing and more seasoning and enjoy with crackers or corn tortilla chips.

 

Notes

  • The quantities can be easily doubled or adjusted to taste
  • Don't forget to add the pickled carrots too! They are delicious!
