Transform any lovely summer salad with a delicious creamy macha dressing and crunchy spicy pumpkin seeds just like we did with this veggie quinoa salad. These two bring all the right textures and flavours to your meals, try them on their own or together for an extra Mexican Twist.

Veggie Quinoa Salad

-100g quinoa

-1 cup carrot, finely diced

-1 cup courgette, finely diced

-1 cup broccoli, chopped into small pieces

-1 tbsp olive oil

-Adobo Seasoning, to taste

-200ml water

1 Prepare the quinoa according to the package instructions. We brought the water to a boil, added the quinoa, lower the heat to a minimum and covered it with a lid for 15 minutes. Turned off the heat and left it to rest for at least 10 minutes, covered.

2 While the quinoa is cooking, mix the veggies in a bowl, add the olive oil and seasoning to taste and air fry it for 17 minutes at 180C or until soft and roasted. Toss halfway. 

3 Fluff the quinoa with a fork and add it to a serving bowl with the roasted veggies. Toss them and allow them to cool down for a few more minutes.


Macha Dressing

-3 tbsp tahini

-1 tsp salsa macha, find the recipe here 

-½ lemon, juiced

-1 tbsp olive oil

1 Whisk all the ingredients together and adjust seasoning to taste. 

*This amount of salsa macha does not make this dressing spicy. There is a light kick, but it mostly adds so much lovely flavour that blends amazingly well with tahini. Our salsa macha is made with lots of garlic and peanuts so they complement each other beautifully! 


Spicy Pepitas/Pumpkin Seeds

-¼ cup pumpkin seeds

-1 tsp olive oil

-Tajin to taste

1 Set a frying pan to medium heat. Once hot, add the olive oil and toss the pumpkin seeds. Stir often so they don’t burn. The seeds will be ready once they look plump and they just start to pop. They will get fragrant too!

2 Remove the pumpkin seeds from the pan and allow them to cool for a couple of minutes before sprinkling Tajin over them to taste.

*These quantities are just a suggestion. These pumpkin seeds or pepitas are such a delicious snack that you can keep them in a sealed container to keep adding to your salads or to snack every now and then.
