We are currently obsessed with this sauce. So creamy, so tasty, so delicious. Our chipotles in adobo are really the golden ingredient that keeps on giving.

Nutty Chipotle Sauce

-100g Chipotles in Adobo (about ½ 220g tin)

-½ cup non-salted cashews

-1 garlic clove

-½ cup olive oil

-1 tbsp mayonnaise

-salt and pepper, to taste

-½ lemon, juiced


1 Start by soaking the cashew nuts in hot, boiling water for about 15 minutes. Strain the water away and transfer the cashews into a blender or food processor.

2 Add the chipotles in adobo, garlic, olive oil, mayonnaise, salt and pepper. Add some of the lemon juice to start and adjust as you go. Blend for a couple of minutes until the sauce is very creamy and smooth. Add more lemon juice or water to thin the sauce if desired. Season to taste.


Notes

  • This sauce is great over avocado toast, pizzas, burgers, sandwiches, rice bowls, and anything you can think of. 
  • You can keep this sauce for over a week in a sealed bottle in the fridge.
