This is such a bold and delicious sauce for your steak. There are so many flavours that work so well together. Adding whole chiles de Arbol to our cooking, just like our Nan used to, adds a lot of flavour without adding a lot of heat. Serve this over veggie rice or even with roasted potatoes!

Spicy Steak Marinade

-4 tbsp soy sauce

-2 tbsp Maggi sauce

-1 tbsp vegetable oil

-1 tbsp Valentina Sauce

-3 tbsp lemon juice

-1 tsp Lemon Pepper Seasoning

-black pepper

1 Mix all the ingredients and pour over the steak strips, making sure they are well coated. Cover and marinate for at least half an hour inside the fridge. 


Spicy Butter Sauce Steak

-450g bavette steak, cut into strips

-2 tbsp butter, divided

-1 shallot, minced

-3 garlic cloves, crushed

-2 Arbol chiles, stem removed and cleaned. Keep them whole for a less hot sauce. 

-1 tbsp American mustard

-3 tbsp fresh thyme

-1 tbsp lemon juice

-½ cup beef stock

-½ cup cream 

-salt & pepper to taste

1 Melt one tablespoon of butter in a large pan set to medium-high heat. Pat dry the steak, season with a bit of salt and pepper and sear them on both sides. Depending on the thickness of your steak strips, cook them just enough to your liking. Remove the steak strips and set aside to rest.

2 Reduce the heat to medium and cook the shallot for one minute. Add the crushed garlic with the whole Arbol chiles and stir often. Add the thyme, mustard, lemon juice, stock and cream. Stir constantly while you bring the sauce up to a boil. 

3 Continue cooking and add one more tablespoon of butter. Stir and reduce the sauce to your liking. Taste and adjust seasoning. Once the sauce has thickened and the flavour is right, return the steak strips to warm them up. Serve immediately. 


Notes

  • This sauce is bold! It is zesty, savoury and with a delicious hint of heat from the Arbol chiles. 
  • Adding whole Arbol chiles is a common practice in Mexican cooking. This releases more flavour than heat. If you want to add spice, break the chilli so the seeds come in contact with the sauce. 
  • Add water to adjust consistency and intensity if desired. 
  • Serve with rice or roasted potatoes.
