Beans on toast

Beans on toast is the ultimate comfort food. A classic of Mexican dishes. Easy to make, warming, full of flavour. In Mexico, our beans on toast are called Molletes and there are many ways to prepare them but they all have something in common: bread, beans, fresh salsa. Pure and simple Mexican ingredients.

The differences go from the type of bread used to the type of cheese that some people add to them. We like to work with what we have available at home so these three ways to prepare beans on toast are just a suggestion to get the flavours we miss from home. We suggest playing with ingredients you enjoy. We can highly suggest adding cheddar cheese on top of the beans and broil in the oven until melted and golden. Use mozzarella, use any bread you like, use the salsa you have in your fridge, keep it vegetarian but don’t forget the beans!

Recipe

You’ll need:

 

Pico/Fresh Salsa:

  • 1 Medium Tomato
  • 2 tsp Onion (adjust to taste)
  • 2 tsp Coriander (adjust to taste)
  • ½ Jalapeño (adjust to taste)
  • Salt & Pepper (optional)
  • Lemon Juice & Olive Oil (optional)

Chop the tomato, onion, jalapeño, coriander and mix well. This salsa works very well on its own for the beans on toast since the beans are deliciously rich in flavour. By adding this fresh salsa to the beans on toast you’ll balance nicely every bite. If you like bold flavours or want to make this classic Mexican fresh salsa to use on its own or in other dishes, add freshly squeezed lemon juice, salt and pepper to your liking. Start with a small amount and adjust. The amount of ingredients will yield a small salsa portion enough for two.  Pro tip: A drizzle of olive oil will give this salsa a beautiful depth. You can use it anywhere you want. Fresh and healthy mexican twist to your meals or snacks.

 

How to build your beans on toast 3 ways:

 

The Classic

Heat up your refried beans from La costeña.

Take a thick slice of bread and lightly toast it.

Spread a generous amount of the warm refried beans on your toast. They are the star of the show!

Add a generous amount of fresh salsa on top and sprinkle with feta cheese. 

With Egg

Cook the egg to your liking. Fried, poached, scrambled...they all work great!

Spread the refried beans on top of the toast and layer the egg on top. This is delicious as it is but we highly recommend to top it up with fresh salsa!

With Chorizo

Cook the chorizo according to package instructions. It works well to crumble it instead of slicing it but this is just personal preference. 

You can build up on top of The Classic and add a generous amount of your freshly cooked chorizo on top of it. 

You can also add the chorizo just after the beans and then sprinkle fresh salsa on top.

Why stop there when you can do as we did and just layer every topping on the egg? Dollop your favourite salsa on top. The sky's the limit!
