This is a classic dip to be enjoyed whenever friends or family gather together in México. Tuna with chipotle is a great combination already, add cream cheese and you have a creamy, delicious and very moreish dip to keep everyone happy and snacking away.
Chipotle-Tuna Dip
-3 cups tinned tuna, drained
-1 cup cream cheese
-¼ cup pickled jalapenos vinegar
-2 tbsp lemon juice
-3 tbsp chipotles in adobo
-1 tbsp mayonnaise
-salt & pepper to taste
1 In a blender or food processor, blend all the ingredients, except the vinegar, until smooth. Add the vinegar little by little until you achieve a nice, creamy consistency.
2 Transfer to a bowl and keep in the fridge until serving.
Notes:
This lovely dip is traditionally served with salty crackers, cheese biscuits or bread slices and of course, perfect to eat with chips too.
