These Crispy Chipotle Beans Tacos are insanely delicious. Having a delicious meal doesn’t need to be overly complicated. Here, you combine simple ingredients to make something crunchy, filling, and delicious. Make sure to make the creamy avocado sauce to go with them too!

Crispy Chipotle Beans Tacos (V)

Refried Beans

-400g pinto beans

-⅓ onion, finely chopped

-2 garlic cloves, crushed

-1 fresh jalapeno, finely chopped

-1 chipotle in adobo, minced

-1 tbsp tomato paste

-a handful of coriander, chopped

-salt and black pepper to taste

-1 tbsp vegetable oil

1 Heat up the oil in a pan set to medium-high and saute the onions for 3 minutes. Stir often and once they start to soften add the garlic and cook for 1 more minute. 

2 Add the tomato paste and the chipotle and cook for 2 minutes mixing all together. Add the beans next with some of their liquid and mix with the onions for 5 minutes.

3 While the beans are cooking, mash some of them to make an interesting texture. You can do this with the back of a wooden spoon or with a fork. Season with salt and pepper to taste and keep hot on low heat.

4 The beans should be creamy, if they get too dry you can add a little more of the liquid from the beans or water to adjust. 


Crispy Chipotle Beans Tacos

-6 to 8 corn tortillas

-vegetable oil, as needed

-salsa macha or chilli oil (optional)

1 Add a little bit of vegetable oil and some chilli oil, if using, to a frying pan and once hot, add one corn tortilla. As the tortilla softens, spoon a good amount of the chipotle beans into half of the tortilla. Close the tortilla with the help of a spatula and allow it to crisp for a couple of minutes or until it gets golden brown. If you have space, repeat the process with a second tortilla on the side. Place it in the pan and spoon beans, close and fry for a few minutes. Turn the tacos so they crisp on the other side.

2 After a few minutes they should be crispy and golden. Remove them to a plate and add more oil to the pan before continuing with the remaining tortillas.


Avocado Salsa

-2 avocados

-a handful of coriander

-1 garlic clove

-1 pickled serrano or jalapeno

-½ lemon juice

-salt and pepper to taste

1 Add everything to a blender or food processor and blitz until creamy. Adjust seasoning to taste.

 

Notes

-These tacos are ridiculously good. It is amazing how simple ingredients create such flavourful combinations.

-Make sure to use plenty of filling and allow the beans to crisp too when you are frying the tacos. 

-Adding a pickled serrano to the avocado salsa will bring more heat to it. Use jalapenos instead for a more friendly kick. Pickled chiles are so tasty! We highly recommend using them in your recipes!
