This soup is equally lovely as a starter or as a wholesome lunch. The magical touch of chipotles in adobo is there, not taking anything away from the sweetness of the sweet potatoes but adding a layer of smokiness to it. Perfect for this season! This is what comfort tastes like.

Spiced Sweet Potato Soup with Chipotle

-2 medium sweet potatoes

-½ onion

-½ garlic head

-½ cup cream

-1 chipotle in adobo

-½ tbsp honey

-1 tsp smoked paprika

-½ tsp ground cumin

-¼ tsp turmeric

-3 to 4 cups stock (it can be chicken or vegetable stock)

-salt and pepper to taste

-vegetable oil as needed

1 Set oven to 200C

2 Peel and roughly chop the sweet potatoes. Place them on a baking tray together with the onion. Drizzle with a bit of oil and honey, and sprinkle over the spices, toss so everything is seasoned. Wrap the garlic with aluminium foil and a drizzle of oil, salt and pepper. Roast for about 35 minutes or until the sweet potatoes are soft. 

3 Once the vegetables have cooled down, place them in a blender with the cream, chipotle and 3 cups of stock. Blend until it is creamy and perfectly mixed. Add more stock to adjust the consistency to your liking. We like this soup to be thick but you could add more stock to make it thinner. 

4 Add about a tablespoon of oil to a large pot and bring up the heat to medium-high, once hot, pour the soup and bring it up to a boil. Taste and season with salt and pepper accordingly. Bring down the heat to a minimum and cook for 15 minutes. 

5 Serve hot! We enjoyed ours with a dollop of cream, some burnt butter, a few extra drops of adobo from the chipotles and a few fried coriander leaves. 


Notes

  • Adjust the seasoning to your liking! You could add more chipotles but if you just want the lovely hint of heat and smokiness, one chipotle pepper works beautifully here. 
  • We love our soups on the thick side but add more stock to adjust the consistency to your liking.
  • Other topping suggestions are crumbled bacon bits, fetta cheese, and even nuts! 
  • Enjoy this lovely soup with some crusty bread or cheese toast!
