This is one of the easiest dishes in Mexican cuisine and yet, full of flavour and tradition. The salsa verde used to make this dish is not different from any other green salsa. The star ingredient is the pork crackling. Chicharrones are a common snack in Mexico. They can be enjoyed with lime and hot sauces, on their own or as shown here, as part of one of the most popular homemade-style Mexican dishes out there.

Chicharron en Salsa Verde / Pork Crackling with Green Salsa

-corn tortillas

-500g Tomatillos, drained

-200g pork crackling

-2 to 4 jalapeño or serrano chiles *see notes

-a handful of cilantro

-4 garlic cloves

-½ white onion

-salt to taste

-1 tbsp vegetable oil

1 Add to a blender the tomatillos, jalapeño o serrano peppers, cilantro, garlic cloves, onion, and about one teaspoon of salt. Blend until smooth and taste. This is where you decide if it needs more chiles or salt. Be aware that pork crackling or chicharrones are salty. 

2 On a medium saucepan set to medium-high heat, add about one tablespoon of vegetable oil, and once is hot, fry the salsa. Bring to a boil, reduce the heat and cook for about 10 minutes. 

3 Once the salsa is cooked, add the pork crackling to it and cook for further 5 minutes. The crackling will absorb the salsa and soften in the process. 


Notes

  • You can use jalapeño or serrano peppers for this recipe. Serranos are spicier than jalapenos, make sure to add them to the salsa carefully. Taste as you go. 
  • Pork crackling is very easy to find in Mexico. In the UK it can be found in the snack section in some supermarkets or in Asian shops. Make sure you use natural flavour for this recipe.
  • This dish is perfect to be used as a filling for tacos on its own but also found as part of a mix that can include picadillo, steak, or quesadillas. 
  • Because this dish is basically made into salsa, the toppings for these tacos are super simple such as diced onions and coriander.
  • A classic way to serve this dish is with beans.
  • When you want an easy, quick meal, you can use ready-made salsa verde such as the ones you can find here.
