One can never have too many avocado toasts. This, in particular, takes a simple toast to a new level of goodness. Start with a nice slice of crusty bread and build up an easy but epic toast with a yummy Mexican Twist.

Black Beans Avo Toast

-Crusty bread, sliced

-1 garlic clove

-Black Beans

-avocado, sliced

-roasted beets or plantain, sliced

-Spicy Lime Sauce 

-olive oil and or butter

-salt and pepper to taste

-feta cheese

 

1 Warm up the beans in a small saucepan on low heat. 

2  Heat up a pan and add a little bit of olive oil or butter. If you don't have roasted beets or plantain, you can fry them until golden brown here before the bread.

3 Remove the beets/plantain slices and toast the bread on both sides until golden brown. 

4 Rub the garlic clove onto one side of the bread slices.

5 Add black beans (no liquid) to the garlic side of the bread. Top up with avocado and beets or plantain slices, and add freshly cracked black pepper and salt to taste. Add crumbled feta cheese and Spice Lime Sauce to taste and enjoy a simple but amazing avocado toast.
