Inspired by the beautiful bulgur pilaf so common in Turkish cuisine but also by our beloved Mexican red rice! Such dishes have very similar components and are fantastic as a side dish or light lunch. This version is full of flavours and textures with a beautiful Mexican twist thanks to the always amazing chipotles in adobo. We highly recommend this comforting recipe!

Chipotle Bulgur

-1 cup bulgur

-½ onion, diced

-½ bell pepper, diced

-½ cup aubergine, chopped

-1 small carrot, diced

-½ cup chickpeas, cooked and rinsed

-½ cup cherry tomatoes, quartered

-2 tbsp coriander, roughly chopped and more to garnish

-2 garlic cloves, crushed

-2 tbsp tomato paste

-1 to 2 tbsp chipotles en adobo, finely diced

-½ cup tin tomatoes, chopped

-1 vegetable stock cube

-1 ½ cups of water

-1 tbsp vegetable oil

-1 tsp butter *optional

-tsp ground cumin

-salt and black pepper to taste

1 Add vegetable oil and the butter to a large pan and saute the carrots for at least five minutes before adding the rest of the vegetables and chickpeas. Stir often for at least 10 minutes. 

2 Add the tomato paste, chipotles, tin tomatoes, and bulgur. Stir until everything is evenly distributed. Add most of the chopped coriander on top.

3 Add the water, stock cube, and salt and pepper to taste.

4 Bring to a boil and simmer, uncovered for 5 minutes. Lower the heat to a minimum and cover the pan. Cook for 15 minutes. The liquids must have been absorbed by then, if there’s still plenty of liquid in the pan, cook for further 5 minutes, uncovered to reduce the liquid. 


Notes

  • Working with a wide pan is best for this recipe. 
  • Adding one tablespoon of chipotles in adobo will not make this dish spicy but it will add a beautiful smokey depth to it. Add more if you like spicier food. 
  • Adding a small amount of butter makes this dish silkier. Do not add it to keep it 100% vegetarian. 
  • This is a fantastic recipe to use any veggies that need to be used in the fridge! There’s no right or wrong here. 
  • This amount can easily yield 4 large portions or 6 small sides. 

To Serve

We served our Chipotle Bulgur with grilled halloumi cheese but it is fantastic with lamb or chicken too! We highly recommend a nice big dollop of Turkish yogurt on the side too.
