This coronation veggie salad is so fresh and delicious! Perfect as part of a light lunch, as a sandwich or as a wrap filling. Our sweet chipotles are wonderful here, becoming a perfect substitute for chutney. Light, tasty and easy to make. Just the way we like it!

Coronation Veggie Salad

-300g chickpeas, drained

-½ cup mayonnaise

-½ cup Greek yoghurt

-2 tbsp Sweet Chipotles

-2 tbsp almonds, roughly chopped

-1 to 2 tbsp sultanas, to taste

-1 tbsp curry powder (or more to taste)

-2 green onions, sliced

-1 medium carrot, shredded

-2 tbsp fresh coriander, roughly chopped

-½ lemon juice 

-salt and pepper to taste

1 In a bowl, mix the mayonnaise, yoghurt, sweet chipotles, curry powder, lemon juice, salt and pepper. Taste and adjust seasoning.

2 In a separate bowl, roughly mash the chickpeas to get some texture. Mix in the sultanas, almonds, coriander, carrots and spring onions. Add the sauce and mix again until everything is incorporated. Adjust seasoning to taste. 

3 Serve over lettuce boats for a light lunch, as a sandwich filling or in a wrap.

 

Note

  • We are loving our Sweet Chipotles lately, they are very tasty and a bit less spicy than the regular chipotles in adobo. The best way to describe them is as a spicy chutney with all the flavour from chipotles and sweetness added. This is one of the reasons why they work so well in this easy but delicious recipe.
