Frijoles Charros or Cowboy Beans are seriously tasty! They are hearty, a meal in their own right but often served as a side dish or part of carne asada tacos. Freshly made pinto beans are often used to prepare this dish but we think life is hard enough so we took the easy route here by using ready-to-use Whole Black Beans.

Easy Frijoles Charros

-1 560g Whole Black Beans

-200g chorizo, we used soft chorizo.

-100g smoked bacon

-½ onion, diced

-2 cups mixed peppers, diced

1 Remove the casing from the chorizo and slice it into even-sized small chunks.

2 Dice the bacon and add it to a large pan set to medium-high heat. Cook for a few minutes until it begins to brown and release fat. Add the chorizo at this point and cook for a few more minutes until it starts to brown, approximately 15 minutes. Lower the temperature if it's browning too fast. 

3 If the bacon and chorizo have rendered a lot of fat, remove with a spoon most of it. Once this is done, add the onions and peppers, stir everything together, lower the heat to a minimum and cook for 8 minutes. 

4 Once the onions and peppers have softened, add the beans. You decide how much of the liquid you want to add. We had these beans over nachos so we added about half of the liquid. Cover the pan and cook for 10 more minutes until everything is hot and has come together. 

 

Frijoles Charros Nachos

-corn tortilla chips, here's a quick guide on how to make your own tortilla chips

-creme fraiche

-sliced jalapeno

-quartered cherry tomatoes

-fresh coriander

-crumbled cheese

-avocado 

-spring onions, sliced

1 Add a layer of corn tortilla chips to a large serving plate and add a generous amount of these beans over them.

2 Top with diced avocado, spring onions, tomatoes, coriander or any other toppings you like. Add dollops of creme fraiche or sour creme and your favourite salsas. 


Notes

  • In our case, the bacon, the chorizo and the beans are already seasoned, so we didn’t find the need to add salt or pepper. Add seasonings according to your taste.
  • The tastiest the chorizo and bacon, the tastier your beans will be! We used smoked bacon and a very tasty soft chorizo. 
  • Use this recipe as inspiration! Feel free to adjust the amount of chorizo, bacon and veggies added! 
  • The most traditional way to make Frijoles Charros is with freshly made pinto beans but any type of whole beans works well. 
  • Frijoles Charros are a perfect side dish for meat dishes or to add to steak tacos.
  • These kinds of beans can be enjoyed on their own too, served in a bowl.
