Easy Tostadas

-corn tortillas to make your tostadas

-1 x Refried Pinto Beans from our range. They can be black, pinto or our lovey Chipotle Refried Beans

-leftover chicken

-lettuce, shredded

-1 large avocado

-1 cup Salsa Verde, or more to taste

-a little bit of fresh cilantro

-1 tbsp fresh lemon juice

-½ tsp garlic powder

-½ tsp onion powder

-salt and black pepper to taste

-feta cheese, crumbled, to taste

-creme fraiche

1 Heat the refried beans thoroughly and keep warm until serving

2 Warm up the leftover chicken and keep hot until serving.

3 Mix together the avocado with the green salsa. Add the lemon, coriander, garlic and onion powder. Blend until smooth. Season with salt and pepper to taste.

4 If you are making your own tostadas, you can lightly brush corn tortillas with oil and arrange them on a large baking tray. Place in the oven and set to 180C. Bake for 7 to 10 minutes and flip them over for 7 to 10 minutes more. The tostadas should be lightly golden and hard. The times can change depending on the oven. If you are using ready-made tostadas, place them in the oven for a few minutes to warm them up or if you have an air fryer, bake them at 180C for 3 minutes.

5 Add a layer of refried beans to the tostadas followed by avocado salsa. Top with chicken, lettuce, crumbled fetta and plenty of creme fraiche. You can add chopped onions, radishes and jalapeno slices. Also, don't forget to add plenty of salsa!

Make it tastier!

  • Make a mix of Greek yoghurt, lemon juice, garlic and onion powder, salt, pepper and diced chipotles and mix with the leftover chicken. Cook in a bit of oil until thoroughly hot. This is a super easy and quick extra flavour to leftover chicken!
  • The avocado salsa has all the flavour of real homemade salsa but is made quickly and with no fuss! Adjust the amount of salsa verde you add depending on the size of your avocados. We used about three very small avocados which ended up being similar to a large avocado. Adding a bit of fresh lemon juice, a touch of coriander and extra seasoning gives a nice extra touch that is delicious!
  • You can enjoy these tostadas with beans only! Beans are such a beautiful meal on their own! Served on tostadas with lettuce, cream, cheese and salsa is really a treat in Mexico!
