There is nothing more perfect than a nice egg salad sandwich when out and about in nature. This one has a little touch of a Mexican Twist thanks to the finely chopped pickled jalapenos and a touch of Valentina sauce that adds a lot of tangy flavour and not so much heat. Just a touch goes a long way but you can adjust to your taste. 

Picnic Spicy Egg Salad

-4 boiled eggs, roughly chopped

-½ red pepper, finely diced

-2 tbsp red onion, finely diced

-1 or 2 pickled jalapenos, seeds and liquid removed, finely diced

-chives, to taste, finely chopped

-2 tbsp mayonnaise

-1 tsp American mustard

-1 tbsp Valentina Sauce

-salt & pepper, to taste

-cheddar cheese, to taste


1 Mix all the ingredients and adjust seasoning to taste.

2 Enjoy this salad in a sandwich with some watercress base and some cheddar cheese. This salad is amazing on its own with crackers.
