If you are looking for an easy and delicious recipe with a beautiful Mexican Twist, look no further. This spicy pork dish is loaded with beautiful flavours and a creamy texture. Everything goes in one pot and transforms into a wholesome meal perfect for this weather. 

 

Spicy Creamy Pork & Potatoes

-450g pork shoulder, cubed

-2 medium potatoes, cut into wedges

-1 medium onion, cut into thick wedges

-2 to 3 garlic cloves 

-1 to 2 tbsp chipotles, diced

-½ cup chicken stock

-¼ cream

-lemon juice, to taste

-onion powder, to taste

-salt and pepper, to taste

-1 tbsp flour

-1 tbsp butter

-1 tbsp vegetable oil 

1 Season the pork with salt, pepper and onion powder. Set a large pan to medium-high heat and add the vegetable oil. Once the oil is hot, sear the pork cubes on all sides until golden brown, this should take only a few minutes. Remove from the pan and reserve.

2 Melt the butter in the same pan add the onions and soften for about 4 minutes. Add the garlic and chipotle. Cook just for a few seconds before adding the flour. Whisk for about a minute and pour the chicken stock. Keep whisking until there are no lumps.

3 Return the pork pieces to the pot and add the potato wedges too. Please bring it to a simmer, lower the heat, cover and cook until the potatoes and pork are tender, about 35 to 45 minutes. 

4 Taste and adjust seasoning with salt, pepper and lemon juice to taste. Pour the cream and mix well. Serve hot.
