Say hello to your favourite salsa! This is a classic tale of simple is better. Precious tomatillos, ancho and arbol chiles treated right, become this amazing explosion of flavours in the form of a chunky, delicious salsa. Perfect for tacos, any tacos, and just about anything in need of a good salsa. So good that you can even enjoy it on its own with corn tortilla chips. 

Ancho & Tomatillo Salsa

-6 tomatillos

-2 ancho or pasilla chiles

-5 arbol chiles 

-½ white onion, sliced

-2 garlic cloves

-1 tbsp vegetable oil

-cilantro, to taste, roughly chopped

-salt and pepper, to taste


1 Clean the ancho chiles by removing the stem and seeds from the inside. Clean any dust or dirt with a damp cloth. Remove the stem from the arbol chiles and clean them with a damp cloth.


2 Set a frying pan to medium and add the oil once hot. Fry the garlic, onion slices, ancho and arbol chiles. Toss them around and keep an eye on the ingredients since they will be ready to be removed at different times. The ancho and arbol chiles will be ready first, remove them as soon as their colour is bright and they become fragrant. Transfer the chiles to a bowl and cover them with boiling water for at least 10 minutes.


3 Remove the garlic cloves as soon as they are golden and soft. Leave the onion slices until last and reserve. 


4 Transfer the chiles, without the water, garlic and tomatillos to a blender and blend until smooth. Season with salt and pepper as you go.


5 Transfer the salsa to a bowl and stir in the onions and fresh cilantro.

 

Notes

  • This salsa is incredibly delicious. It is also spicy! Adjust the number of arbol chiles to your taste.
  • We didn’t add water to the salsa as the tomatillos have plenty of it. The texture is chunky and not runny. You could add water to adjust the consistency to your liking.
  • This salsa is the perfect taco salsa! Any tacos! Delicious even on its own with tortilla chips!
