We love making salsas with our Mexican ingredients. It is quite fun, and delicious, to use them beyond the traditional ways. Don’t get us wrong, we will always be big fans of traditional salsas and sauces but it is amazing how well they can blend with unusual ingredients to be different but still amazing.  This is part IV of our Homemade Salsas Collections and you can find Part III, Part II and Part I 

There are so many great elements to this salsa. Made with pasilla chiles which are not spicy but incredibly flavourful with tones of fruitiness and a gorgeous dark red colour, then arbol chiles that bring not only delicious flavour but make this salsa spicy. Then in comes the tomatillos, our quintessential Mexican ingredient that is full of tangy, fresh flavour. The result is a flavourful bomb that is finished off with avocado chunks. An absolutely beautiful example of the magical way our ingredients come together in amazing ways. This is not the first time we have made coriander sauce. There are just so many ways to make coriander the star of a sauce or dressing. This is one of those where the result is tangy, creamy, and slightly spicy thanks to the addition of pickled jalapenos. This time, we used the sauce over some delicious rice dish but we got so much use of the sauce over salads, mixing it with avocados and just as an overall delicious dressing! This sauce is the perfect dressing for this dish but as with most of our sauces, it crosses over so many other dishes. Chipotle and tahini have always been one of our favourite combinations, the nuttiness from the tahini and the smokiness from the chipotles are just complimentary to each other. This salsa is so good that we made a whole dish around it. Poblanos and tomatillos are some of the most iconic Mexican ingredients. Forever present in so many of our traditional dishes. This time, they combine delicious roasted onions, arbol chiles and garlic. Blended to create this fiery, delicious, roasted salsa that is just perfect with everything! Ancho chiles are a beautiful ingredient. They are one of our most precious chiles! They have a beautiful deep red colour, fruity and not spicy. This time, we kept their beautiful colour and flavour and added heat thanks to our other loved chiles, arbol chiles! It may not say sauce in its description but we have absolutely used it as such! This is such a beautiful sauce that works as dressing over this recipe but we ended up just pouring it over avocado toast, grilled halloumi tacos and breakfast eggs. Chipotles in adobo possibly deserve the title of our most used and versatile ingredients. There is never a failure whenever we use them. This is one of those examples. Chipotles in adobo are perfectly delicious on their own but when mixed with cashew nuts and a few other ingredients, produce something beautiful like this sauce. Salsa macha is one of our favourite Mexican sasa. This time, we tweaked the recipe and mixed a few dried chiles and added a touch of sweetness! The result is absolutely beautiful. An absolute must-try for all the chilli lovers out there! Find the recipe here. 

It should be clear by now that a fact of life is that chipotles in adobo and nuts are the perfect combination. We love our chipotles with tahini, with cashew nuts and now, even easier, with peanut butter. The result is creamy, spicy, absolutely dreamy. This sauce works every time and with everything.
