Ingredients:

For the filling:

1 pound (450 grams) minced beef or chicken
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon chilli powder (adjust according to your spice preference)
Salt and pepper to taste
1/2 cup tomato passata (or tomato sauce)
1/4 cup water
1 tablespoon tomato paste
1 small can of kidney beans, drained and rinsed
Chopped fresh coriander (cilantro) for garnish

For the taco shells and toppings:

8-10 small flour or corn tortillas
1 cup grated cheddar cheese
1 cup shredded lettuce
1/2 cup diced tomatoes
1/2 cup sliced jalapenos (optional)
Sour cream and guacamole for serving

Instructions:

  • Heat the olive oil in a large pan over medium heat. Add the onion and garlic and cook until softened and fragrant.
  • Add the minced beef or chicken to the pan and cook until browned, breaking it up with a wooden spoon as it cooks.
  • Once the meat is browned, add the cumin, paprika, chilli powder, salt, and pepper. Stir well to coat the meat with the spices.
  • Add the tomato passata, water, and tomato paste to the pan. Stir to combine everything, then bring the mixture to a simmer.
  • Reduce the heat to low and let the filling simmer for about 15-20 minutes, allowing the flavours to meld together. Stir occasionally.
  • While the filling is simmering, warm the tortillas in a dry skillet or in the oven according to package instructions.
  • Once the filling is ready, add the kidney beans to the pan and stir to combine. Cook for an additional 5 minutes.
  • To assemble the tacos, spoon the filling onto each tortilla. Top with grated cheese, lettuce, diced tomatoes, sliced jalapenos (if using), and a sprinkle of chopped fresh coriander (cilantro).
  • Serve the tacos with sour cream and guacamole on the side.

Not bad! Seriously impressed at the speed that the recipe was created and the very clear instructions to follow. Is it really The Best homemade taco recipe? Debatable! Did it include Mexican ingredients available in the UK as requested? Not quite! But a good example of why our jobs are still safe…for a bit longer at least. 


The recipe can produce a good taco but we wanted the best! So based on the fact that we haven’t tried the classic Taco Friday version of tacos yet, we’ll play with this recipe and tweak it just a bit to give it a real Mexican Twist by using our authentic Mexican ingredients! 

The result is actually a really delicious taco, well seasoned, simple to make and topped with nice and fresh ingredients!

Here’s our recipe:


The Best Homemade Tacos by AI (almost)

Filling

-450g minced beef

-1 tbsp olive oil

-1 small onion, finely chopped

-2 cloves of garlic, finely chopped

-1 tsp ground cumin

-1 tsp smoked paprika

-1 tsp oregano

-1 chipotle in adobo

-salt and pepper to taste

-½ cup tomato passata

-¼ cup of water

-1 tbsp tomato paste

-1 can of whole black or pinto beans, rinsed and drained

-1 can of White Mexican Corn, drained

1 Heat the olive oil in a large pan over medium heat. Cook the onions for a few minutes until fragrant. Add the garlic and cook for a minute. Add the minced beef and mix with the onions and garlic. Break down the minced beef with the back of a spoon and cook until it browns.

2 Add the ground cumin, paprika, chipotle and tomato paste. Continue cooking for 5 minutes until fragrant. Add the passata and water, combine everything and bring to a simmer. Lower the heat and cook for 20 minutes until the flavours come together and it has thickened a bit. Season to taste with salt and pepper. 

3 Add the beans to the minced beef mixture and continue cooking for at least 5 more minutes until the beans have combined and warmed up. 

 

Tacos

-8 to 10 corn tortillas

-feta cheese, crumbled

-¾ cup diced tomatoes

-¼ cup diced onions

-¼ cup chopped cilantro

-1 avocado, diced

-1 jalapeno, diced

-½  lime, juiced

-salt and pepper to taste

-Tajin

-creme fraiche, as needed

1 While the filling is cooking, add to a small bowl the tomatoes, onions, cilantro, avocado and jalapeno. Toss and combine the ingredients. Add the lime juice and season with salt and pepper to taste for a quick and fresh salsa. 

2 Warm the corn tortillas and keep them hot wrapped in a teatowel or in one of our tortilla warmers

 3 Serve the tacos with plenty of filling, top with crumbled feta cheese and fresh salsa! Enjoy!
